
Prime Minister And NSW Premier Officially Opens Hay St Market At Paddy’s

Sydney, Australia – Wednesday 9th April 2025 – Sydney’s newest world-class marketplace, Hay St Market at Paddy’s, was officially opened today by Prime Minister Anthony Albanese, NSW Premier Chris Minns, Sydney Lord Mayor Clover Moore, and Minister for Tourism Steve Kamper, alongside industry leaders and dignitaries.
Sydney Markets Limited Interim CEO Dale Doonan reflected on the occasion, “The official opening of Hay St Market at Paddy’s is a huge milestone for our iconic market and highlights the possibilities for our traders, tourism and what lies ahead. We look forward to welcoming many more people through our doors for years to come.”

Developed by Doltone Hospitality Group, the $20 million project spans 3,000 square metres and features 48 traders, 25 cuisines, and a rich mix of fresh produce, food, beverages and specialty retail, creating 300+ local jobs. Since its soft opening in March, it has attracted both locals and tourists, reinforcing Paddy’s as a major destination drawing over 5 million annual visitors.
Prime Minister Anthony Albanese acknowledged the significance of the project, stating “Hay St Market enhances a corner of Sydney that is already home to Market City and the iconic landmark that is Paddy’s Market. It is like a missing piece of the puzzle that has finally been slotted into place."

Paul Signorelli OAM, Executive Chairman of Doltone Hospitality Group, added a personal note, “My father Biaggio Signorelli, arrived in Australia in 1954 and started his journey at Paddy’s Markets unloading bananas by hand."
