Coriander and Lemon French Toast
You know what's great about an Australian breakfast? It's the fact that you get to eat it as soon as you wake up and put on your slippers.
French toast is traditionally a sweet dish - made with bread, eggs and milk, and often topped with things like butter, sugar, maple syrup or jam.
But this take is different, Baby! This is a savoury French toast - made extra jazzy because of the addition of lemon and coriander. Yes, some people say they don't like coriander - and those are exactly the type of people you don't want coming to your house.
- Knob of butter
- ½ cup of fresh, finely chopped coriander
- Zest + juice of 1 lemon
- 4 slices of high-quality white bread (soft)
- 2 eggs, whisked
- Salt + pepper to taste
- *Gorgeous Frenchman or woman, to own your taste
- Whisk your eggs in a bowl
- Add your lemon zest and a dash of lemon juice, whisk again
- Carefully fold in your coriander
- Dredge your white bread in the mix
- Preheat a frypan on high heat, add your butter knob
- Fry your coated bread, most delicately
- Once golden brown on both sides - dash it with a sprinkle of lemon juice again
- Grab your Frenchman or Frenchwoman - ask them to sit nicely at the table - or even better "petit déjeuner au lit"

Tips and Tricks
Use enough good-quality butter (e.g. Lurpak or Pepe Saya) to ensure your coated bread does not catch to the frying pan.
