Paneer and Ghee Curry with Tomatoes
Paneer is an Indian cheese, similar in texture to tofu. It tastes like "cottage cheese" but many people find the consistency more delightful. Ghee is an Indian "clarified butter" and is tasty and presumably healthier than regular butter.
- 350 grams of good quality paneer - from your local Indian grocer
- 4-5 ripe tomatoes, skins peeled off - chopped finely
- 1 white onion, diced finely
- Handful of chopped coriander
- Lemon zest
- Red curry paste (please make your own if you can)
Tomatoes will peel nicely once you plunge them in boiling water and let them have a bath for 10 minutes.
Do a criss-cross (head and tail) and let those babies wait it out.
